Simply Delicious Apple and Cinnamon Cupcakes

These cupcakes are perfect for the Autumn season with warming cinnamon spice and cooked apples.

I love baking on a Sunday! It really gets me ready for a week of work and I find it super relaxing. This week, I made some Apple and Cinnamon cupcakes inspired by Zoella's recipe. I didn't have the time to do the crumble this time, but they were just as tasty without. Find the full recipe below...

What you'll need for the cake 125g unsalted butter at room temperature 155g caster sugar 2 eggs 1 tsp vanilla extract 230g flour 2 tsp baking powder 1 tsp ground cinnamon 1/2 tsp salt Apples What you'll need for the icing 250g unsalted butter at room temperature 110g light brown soft sugar 1 tsp vanilla extract 1 tsp cinnamon 400g icing sugar 1-2 tbsp milk What you'll need to do

1 Preheat your oven to 170°C fan.

2 Peel, core and chop 2-3 apples in a saucepan and add water and around a tablespoon of sugar and simmer until soft.

3 Meanwhile cream together the butter and the sugar in a stand mixer.

4 Add the eggs and the vanilla extract and mix. 5 Then add the dry ingredients and mix again. 6 Pour in as many apples as you prefer and stir in by hand with a wooden spoon. 7 Spoon equally into your cupcake cases and bake for around 15-20 minutes. 8 For the icing, beat together the sugar, butter, cinnamon and vanilla in a mixer for a loooong time until its fluffy! 9 Add the icing sugar bit by bit and mix.

10 Pour in as much milk as you think for the texture of your icing. I like mine thick!! 11 Pipe your icing on your cakes however you like and then you're done 😋😍
