How To Make A Gluten Free Banana Loaf

Don't let those over ripe bananas go to waste because whilst they may not be perfect to eat, they are perfect for a banana loaf.


When you see those blackening banana's in your fruit bowl, think twice before putting them in the bin! Over ripe bananas give the best flavour for a banana loaf... The tasty recipe is below:


What you'll need:

  • 1 1/2 cup plain gluten free flour

  • 1/2 cup light brown soft sugar

  • 1/4 demerara sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup unsalted butter (melted)

  • 1 1/2 cup mashed banana (3-4 bananas)

  • 2 eggs

  • 1/2 tsp vanilla extract

  • a little bit of honey to taste

What to do:

  1. Preheat oven to 180°C fan.

  2. Whisk all the dry ingredients together.

  3. In a separate bowl whisk together all the wet ingredients until it becomes smooth (no need for an electric whisk).

  4. Sift the dry ingredients into the wet ingredients and whisk together.

  5. Bake in a loaf tin for around 1 hour. Yum
