I recently made the most tasiest banana & chocolate chip muffins that I have ever come across. Check out the recipe!
When I think gluten free muffins, the words dry, crumbly and I need a glass of water seems to spring to mind. Though, after many failed attempts of making muffins, I finally made the most tastiest gluten free banana & chocolate chip muffins I have ever tasted.

Ingredients you will need:
1 3/4 cup gluten-free flour (I used Doves Farm)
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp xanthan gum
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup unsalted butter, softened
1/2 cup packed light-brown sugar
1/4 cup + 2 tbsp granulated sugar
2 large eggs
1 1/2 cups mashed overripe bananas (about 3 large)
100g milk chocolate chips
Here's what to do:
Pre heat oven to 200°C
Whisk together all the dry ingredients and set aside.
In a separate bowl use an electric mixer and whip together the butter and sugars until light and fluffy. Mix in the eggs one at a time and combine well.
Combine with 1/3 flour mixture and then add 1/2 of the mashed bananas. Repeat and then add the last 1/3 of flour.
Bake for 17-20 minutes until golden brown
