As good as they look, these banana and chocolate cupcakes are a delicious treat either left plain or with some pretty buttercream icing.
I spent the day baking again! These tasty gluten free banana chocolate cupcakes are so moist and delicious. A great use for those over ripe bananas in your fruit bowl! Recipe below:
What you'll need
125g caster sugar
125g butter
2 eggs (slightly beaten)
Few drops of vanilla extract
100g plain gluten free flour
25g cocoa powder
2 tsps baking powder
2 overripe bananas (mashed) 🍌 .
What to do 1️ Cream together the butter and sugar in a bowl until light and fluffy. 2️ Gradually whisk in the eggs and fold in the dry ingredients (flour, cocoa powder, baking powder). 3️ Then, mix in the mashed bananas until combined. 4️ Line a 12 hole cupcake tin with cases and split the mixture between them. 5️ Bake in the oven for 20-25 minutes on 160°C fan.
Once cooled, they really are super moist and sweet! I kind of wished I had iced them (as that's my favourite part), but they are so tasty on their own!
