One of my bestest chums introduced me to a delicious new dinner idea and now, I won't stop sharing it with others!
My friend's favourite foods ever are cheese and avocado, she would eat them with every meal if she could! So a recipe that has chicken, stuffed with brie and served with some avocado on the side, literally screams her name. Equally, I enjoyed it too. It's so super simple to make and has so much flavour in each bite!
All you need to do is, slice a pocket into the chicken breast and stuff it with your chosen brie. Wrap the chicken tightly with the prosciutto and either bake it on a tray in the oven on 200°C for around 25 minutes or on a George Foreman grill for 6-9 minutes until cooked through and the cheese is all melted!
Meanwhile, wash, dry and prick your sweet potatoes and microwave them for 10 minutes. Once cooked, mash the insides to form a sweet potato mash. It is also delicious paired with sweet potato wedges/fries.
I served it all with sliced avocado, an extra slice of brie and some mayonnaise. The saltiness from the ham mixed with the creamy flavour of the cheese and avocado is just delicious. And, totally gluten free with no risk of cross contamination!
